CASHEW SOUR CREAM
This staple sauce is so versatile and delicious that you’ll want to keep cashews on your grocery list indefinitely. I love the organic raw cashews from Thrive Market. They are a great price and always high quality.
Use this sauce on tacos, burritos, nachos, potato cakes, chilis, and more. Pro tip: put the cashew cream in the squeeze bottle on my Amazon storefront for beautiful IG-worthy drizzles.
If you have a nut allergy, or are nut-free for another reason, I have a nut-free version of this sour cream in my completely tree nut-free ebook, Everybody Loves Food.
Ingredients
1 c. cashews, soaked for about 2 hours
½-1 c. water
1 tbsp lemon juice
A bit of salt
Method
1. Blend all ingredients until smooth in a high-speed blender or food processor. Add more salt and lemon as desired. But remember to add it slowly because once added, you can’t take it back!
NOTE: Use the Vitamix blender for best results! You can find the one I have in my Amazon storefront.
