My mom has always loved cooking, and her food has been famous among our friends since I can remember. Then my sister and I went vegan and she was scratching her head. Years later, my father turned to plants and completely reversed his medical conditions. Over the past decade and a half, she has had to relearn what she knew about cooking for others and figure out how to make plants shine on the plate. Now my mom is a passionate plant-based eater herself, and to celebrate this, she and I created an e-book filled with veganized versions of our favorite recipes in addition to some new ones we whipped up and honed.
On top of being absolutely delicious and easy to make, these recipes are completely tree nut-free. Not only are nuts expensive and high in fat, I have a close friend who is very allergic to nuts and finds it hard to eat plant-based because of her allergy. I wanted to contribute an allergy-friendly vegan cookbook to the world to encourage those with allergies to eat more plants. My mom and I hope you enjoy this book that took many hours of cooking together!
